Dubai:Kai Po Che! - is originally a Gujarati phrase that means "I have cut" which refers to  Makar Sankranti (known as Uttarayan in Gujarat) where one of the competitors uses his kite to cut off another competitors kite and yells "Kai Po Che!"[ 
 
Why we fly kites during 'Makar Sankranti'? According to the Hindu calendar Makar Sankranti is a festival celebrated at Magh 1st of Hindu Solar Calendar for the happiness of getting new crops for farmers. It also symbolises the end of the winter solace which makes the day last longer than night. In India with the new year comes the festival of Makar Sankranti, a festival celebrated by Hindus. Makar Sankranti falls on the day of the year when the sun, the king of all planets, is in the rasi (house) of Makar (Capricorn). 
 
The Basant Kite Festival has been a historic spring time kite flying event during the Basant Panchami festival in the Punjab region in India and Pakistan. It falls on Basant, also called Basant Panchami. According to the Punjabi calendar it is held on the fifth day of lunar month of Magha marking the start of spring. 
Historically, Maharaja Ranjit Singh held an annual Basant fair and introduced kite flying as a regular feature of the fairs held during the 19th  century which included holding fairs at Sufi shrines. Maharaja Ranjit Singh and his queen Moran would dress in yellow and fly kites on Basant The association of kite flying with Basant soon became a Punjabi tradition with the centre in Lahore which remains the regional hub of the festival.  Basant Panchami is a popular Hindu festival that celebrates the onset of spring. ... In the Punjab region, it is celebrated as the festival of kites on the fifth day of spring. On this day, Goddess Saraswati is worshiped. It is also known as Shree Panchami. Lohri marks the end of winter season, and is a traditional welcome of longer days and sun's journey to the northern hemisphere by Sikhs and Hindus in the Punjab region of the Indian subcontinent. It is observed the night before Makar Sankranti, and according to the solar part of the lunisolar Bikrami calendar and typically falls about the same date every year (January 13).
